Soba Noodles with Carrots and Celery

Ingredients

4 cups water

2 scallions - rinsed

5 leaves basil (optional)

2 servings whole wheat soba noodles

splash soy sauce - to taste

splash rice vinegar, seasoned - to taste

1 packet miso soup mix (for two)

3 stalks celery - leaves reserved

2 carrots - scrubbed

handful beansprouts

Directions

1. Set water to boil.

2. Chop carrots in diagonal rounds, ~3/8 thick. Chop celery into ~1/4 thick slices, reserve celery leaves for garnish. Thinly whites of scallions, chop greens diagonaly and reserve for garnish. Put sliced carrots, celery and scallion whites together in a bowl. Rinse beansprouts and reserver for garnish.

3. Add miso mix packet, rice vinegar, and soy sauce to water, stir, let come to boil, break sobal noodles in half and add to pot. Boil for 2 minutes.

4. Add carrots, celery and scallion whites. Boil until soba is done (another 3-4 minutes).

5. Serve immediately garnished with celery leaves, scallion greens, beansprouts and basil.

Notes

Goes well with TJ's potstickers and sesame cucumber salad.
